No, FODZYME® does not break down or convert fructose. However, fructose intolerance is unique among FODMAP sensitivities, as issues typically arise from a high fructose-to-glucose ratio rather than fructose itself (except in rare cases like hereditary fructose intolerance) [1]. Many individuals sensitive to both fructan and fructose find that FODZYME® allows them to successfully enjoy foods containing fructan without triggering symptoms.
Fructan is a molecule made up of chains of fructose, often ending with a glucose unit. When FODZYME® breaks down fructan, it releases a small amount of fructose and glucose. However, this is unlikely to cause issues for most people sensitive to both fructan and fructose, as fructose tolerance thresholds tend to be much higher than fructan tolerance thresholds. Additionally, the common foods FODZYME® is used on typically contain glucose or glucose precursors (like starches), which help balance fructose absorption.
That said, FODZYME® is not recommended for use on high-fructose foods.
